Serves 4

500g stewing beef

2 large onions

2 bay leaves

2 tsp ground cumin

2 tsp ground coriander

1 tsp cayenne pepper

400g chopped tomatoes

300ml water

2 large potatoes

1 tablespoon poppy seeds

1 red onion

1 tomato


1 lemon


Slice the onions, and place a large pan on a medium heat. Add a drizzle of oil and add the onions. Saute gently until soft. Chop the beef, and add to the pan, browning the beef and mixing with the onions. Turn the heat down slightly, and add the ground cumin, ground coriander and the cayenne pepper. Cook the spices for 1-2 minutes, and then add the chopped tomatoes and the water, finally add the bay leaves. Bring to the boil, and then simmer for 45 minutes.

For the poppy seed potatoes. Peel and chop the potatoes into small cubes. Boil for 20 minutes, until par boiled.

Add oil to a baking tray and set the oven to gas mark 5. Drain the potatoes and put them in the tray. Cook for 20-30 minutes. When browned and cooked through, sprinkle the poppy seeds over the top.

To make the salad, peel and chop the red onion, chop the tomatoes and mix together. Add a large bunch of chopped coriander and a squeeze of lemon.
