Pan-fried Madagascar Prawns

Pan-fried Madagascar Prawns

 

 
serves 2
 
Ingredients:
8 large Madagascar prawns
Salt
3 tsp turmeric
1 small red onion
5cm root of ginger
2 tsp red chilli powder
2 tsp ground cumin
1 tsp garam masala 
½ tsp granulated sugar
Juice of 1 lemon
Plain flour
Vegetable oil
 
De-vein the prawns (check out this video if you don't know how - http://www.youtube.com/watch?v=iBy28LglBTA )
Wash the prawns thoroughly, rub them with 1/2 salt and 1 tsp turmeric and leave to one side. 
In a blender or food processor, add the onion, 8 large Madagascar prawns, red onion, remaining turmeric, ginger, red chilli powder, ground cumin, garam masala, granulated sugar, and the juice of 1 lemon.
Once mixed, rub the paste onto the prawns, and then sprinkle liberally with flour.
Heat a frying pan, and then add just enough vegetable oil to cover the bottom of the pan. When hot, add the prawns to the oil, and leave for 4 minutes each side. Remember prawns should be pink throughout when cooked. 
 
Serve with rice, salad and yoghurt.
